The 2023 ranking of the international Taste Atlas guide recognizes Lima as the third city in the world where the local population and visitors can enjoy the best food, based on a wide variety of typical peruvian dishes.
The Taste Atlas guide, which compiles authentic recipes, reviews from food critics and articles on popular ingredients and dishes, places Lima with a score of 4,66 below only the Italian cities of Florence (4,71) and Rome (4,68).
Taste Atlas reasons for recognition:
• Lima is a gastronomic meeting point that is characterized by its diversity of flavors and the use of fresh fish and shellfish.
• Innovative fusion of traditional peruvian ingredients with international culinary techniques, which makes Lima a gastronomic meeting point.
• Ceviche, a dish made with raw fish marinated in citrus juices and seasoned with chili peppers.
• Tiradito, a peruvian-japanese hybrid of thinly sliced raw fish with a spicy sauce, as a unique and emblematic offer of the city of Lima.
• Anticuchos, grilled marinated beef heart skewers, hard to beat when it comes to street food.
• Typical Lima dishes such as salchipapas, ají de gallina and the inevitable butifarra, which consists of a sandwich made with a generous portion of country ham, criolla sauce and lettuce inside French bread.
• Traditional Lima food in restaurants such as Isolina Taberna Peruana, Astrid y Gastón, Mi Barrunto, Panchita and the Antigua Taberna Queirolo.
