The peruvian restaurant «Central» by Virgilio Martínez and his wife Pía León goes from second to first position in the list of the best restaurants in the world «The World's 50 Best Restaurants».
The restaurant in Lima carries out a very special
concept: recognize and revalue the various peruvian products that are grown
in the regions of Peru and that can serve as ingredients in the preparation
of the dishes prepared daily for diners.
Through each of its dishes it offers a unique experience for the customer to try meals that contain unknown or little-used ingredients, such as chaco clay, maca root or freeze-dried potatoes. For example, the dish «Experiencia Territorio en Desnivel» contains 12 foods from the peruvian ecosystem, among them cocona, kiwicha, cecina, chaco clay, cabuya, muña, mucilage, etc. The «Mundo Mater» dish explores 14 ecosystems where the diner has the opportunity to taste yuyo, clams, shrimp, grouper murike, paiche, cassava, sea brain, pacu, coca leaf, among others.
Pía León was chosen two years ago as «The best female chef in the world». His own fine-dining restaurant «Kjolle» is also high on the list of the best restaurants in the world. The Kjolle (Buddleja Coriacea) is a tree that grows at extreme altitudes in the peruvian Andes, with bright orange flowers that are used to dye typically andean textiles.
